每年九月都是雪梨帽子評鑑指南出爐的日子~
今年的名單和去年其實相差不大，也沒有甚麼太多經驗之處
但有幾間新餐廳的入圍來勢洶洶頗有氣勢的，感覺是可以期待的好地方

第三度獲得年度最佳餐廳獎的Sepia絕對是是最佳合適的選擇，一個成熟的餐廳，恭敬的服務，典雅的家具，以及恰到好處的對待每一個客人。定義Sepia為日式料理或當代西餐可能是很難的問題，主廚將日式烹調手法結合了澳洲當地食材，因為運用最新鮮的食材也才能做出這麼出色的日式料理。

雖然沒拿過三頂帽子的Chef Brent 在近一年來已經掌廚了三間新餐廳並共奪下四頂帽子，曾經與他一起工作的我也感到於有榮焉，非常實用的菜單平易近人，但背後卻有深厚的道理。強大的核心團隊絕對是它珍貴的財產，我記得在他的Bentley舊館工作時，廚房只有4個廚師要服務Fine Dining晚餐近100位的客人，當時在２００５年他也拿過一次年度廚師，但現在的成就跟當時肯定不一樣！
